The broths are of the most common dishes in Guatemala. Regardless of the weather, these stand out at the table during any food time, due to their nutritional contributions. Among the most popular, the Macuy broth (or blackberry grass) and the waterfront broth are mentioned.

“When we talk about herbal broth, most people refer to the Macuy broth, also known as Quilete. Although sometimes reference is also referred to the Berro broth, which stands out for its bitter taste, ”says nutritionist Gabriela Ordoñez.

Berro is a plant that can grow in rivers, on earth or in pots. Your scientific name is Nasturium officinale, Its leaves are round, games and has small white flowers.

This plant is used to make salads, broths and vegetable creams. It is characterized by its medicinal properties, since it is a good alido to combat anemia and provide energy, by being rich in iron, sodium, iodine, phosphorus and magnesium. It is also used to treat arterial hypertension, difficulties in urinating, fatigue, cystitis, gingivitis and preventing hair loss.

Watercress is not advisable to consume it when you have gastritis, Hypothyroidism and gastroduodenal ulcers. In addition, Ordoñez indicates that it is not recommended in high doses or in prolonged consumption.

According to the naturopath Gabriela Ordoñez, Mora or Macuy grass is rich in protein. In each portion it brings approximately five grams of protein. However, it cannot be a substitute for meat.

The quilete, as is also known, is rich in vitamins a and C, in fiber, iron, calcium and phosphorus. These elements make the plant help when you have anemia, flu, asthma and gastrointestinal problems such as diarrhea, constipation and gastritis.

How to prepare herbal broth

The nutritionist Ordoñez explains that for the broth to have more nutrients, the ideal is to use the chicken broth as a base. This is the water that is used when the chicken is cooked.

Berro broth recipe

  • 1 medium water bunch
  • 3 tomatoes
  • 1 onion
  • 4 eggs
  • 3 potatoes
  • 1 güisquil
  • 1 liter of water or chicken broth
  • Salt to taste

Disinfect all ingredients. Finely pique the tomato and onion, in thick paintings the güisquil and the potato. In a pot, place the chicken broth to boil and then add the vegetables, let cook for 20 minutes. After that time, add the watercress and let cook for 10 more minute. Serve hot.

Macuy broth recipe

  • 1 medium bunch of macuy
  • 2 eggs
