Chef Orlo Gross presents the preparation of Tom Yum Talay, refreshing and comforting soup, in which the star ingredient is the Lemongrass.

Ingredients

500 grams of assorted seafood (shrimp, mussels and squid)

1 liter of fish or shrimp broth

1 branch of lemongrass (lemon grass), cut into large pieces

3 galangal slices (it can be replaced by fresh ginger)

3 Kaffir Lima leaves (can be replaced by orange leaves)

2 red chiles or to taste

200 grams of mushrooms

3 tablespoons of fish sauce

2 tablespoons of sugar

2 lemons juice

Fresh coriander leaves

½ cup coconut milk (optional)

Preparation

  1. In a large pot, place the fish or shrimp broth and bring to a boil.
  2. Add the lemongrass, galangal or ginger, kaffir lime leaves or orange leaves and chiles.
  3. Let boil for about 10 minutes for herbs to release their flavor.
  4. Add the assorted seafood (shrimp, mussels and squid) and the mushrooms. Cook for 3 to 5 minutes or until seafood are cooked.
  5. Add fish sauce and sugar. Mix well so that everything is integrated.
  6. Just before removing the soup from the fire, add the lemon juice to taste. For a creamy version, add coconut milk and mix well.
  7. It can be served in metal dishes with fire under it to keep it hot, as is traditionally done in Thailand. If not, use a heat with heat or a soup dish.
  8. It is usually accompanied by steamed jasmine rice, which helps balance the spicy and acidic flavor of the soup, and offers a perfect base to enjoy this rich combination.
  9. Serve hot and decorate with fresh coriander leaves.
