Chef Erik Núñez proposes the hummus recipe with Chipilín, A combination of chickpeas and native, delicious and nutritious plant.
Ingredients
200 gr of can in can, drained and without the peel
50 gr of chipilín
1 garlic clove
60 gr of tahini (sesame paste
50 ml of olive oil
50 ml of chickpea fluid
Lemon juice
Salt and pepper to taste
For Chile Oil Guaque:
2 guaque chiles
75 ml of olive oil
To decorate:
Toasted Pepitoria
Chile Oil Guaque
Finely chopped parsley leaves
A pinch of powdered paprika
Chipilín leaves
To accompany:
1 golden bread
Preparation
1 Disinfect ingredients. To elaborate the hummus, introduce all the ingredients in the blender and process until obtaining a fine and homogeneous puree. Rectify seasoning and cool until it is served.
4 For Chile Guaque oil, clean chiles and hydrate in hot water for five minutes. Process the ingredients in the blender, and pass them through a strainer.
5 Assemble the hummus on the plate, decorate with pepitoria, parsley, paprika, guaque chili oil and chipilín leaves. Finally, accompanying with pita bread in triangles.

The chipilín (Crotalaria Longirca) It is a plant originally from Central America and is a traditional food of Guatemala, whose smell and flavor are characteristic. It is customary to consume tender leaves and shoots, either alone or mixed with food. In Guatemala, it is sown in several departments, in wet areas. Chipilín leaves are very nutritious, as they are an important source of calcium, iron, magnesium and vitamin A. It also contains vitamins of group B, vitamin C and beta -carotene.
